Puerto Vallarta’s gastronomy is the lucky by-product of a rich culinary Mexican history and a fortunate topography.   Within a 90-mile radius, you can find fresh and diverse vegetables, grains, meats and, of course, locally-caught fish and seafood.

Largely because of its proximity to food resources, Puerto Vallarta’s gastronomy is well-executed and enjoys a solid reputation.  The Banderas Bay is replete with incredible choices to eat, from casual to high-end.

Some local delicacies will leave you clamoring for more.  Fish ceviche is cooked in lime juice and usually served on a tostada.  When fresh ingredients and good fish, such as mahi-mahi are used, ceviche is a culinary star.

Originating in the state of Jalisco, birria tacos feature a slow-cooked meat stew marinated in aromatic red chiles.

Pescado Zarandeado, served along Mexico’s Pacific Coast, is a whole grilled fish.  Before it goes on the grill, the fish is slathered with a chile and garlic-based seasoning paste and finished off with a final glaze of flavored mayonnaise. The result is tantalizing delectable and memorable.

Puerto Vallarta also boasts a wide range of acclaimed chef-run restaurants. Five star chefs like Thierry Blouet of Cafe des Artistes and the dynamic duo Ulf Henrikkson and Bernhard Güth of Trio restaurant perfectly complement more moderately priced, but just as tasty, restaurants such as Joe Jack’s Fish Shack and No Way José!
